Welcome to your monthly installment of
Fresh & Seasonal Recipes! In most of the country, the weather is heating upand your state may be opening up. While the prospect of eating in a restaurant is definitely appealing, we're still looking forward to creating some very special meals at home with the freshest local produce. Here are some of our ideas for June's delicious fruits and vegetables, as well as some classic Father's Day recipes!
Blueberries

The earliest blueberries are popping up at Farmer's Markets, and we're always excited to see them. These bright-blue gems aren't just delicious, they're a good source of fiber and vitamins C and K. One of our favorite blueberry recipes is this
Blueberry Cornbread Cobbler. Bright blueberries are mixed with
Tapioca Flour, sugar and lemon and topped with a tender biscuit crust made with our
Gluten Free Cornbread Mix. Whipped cream adds the perfect finishing touch!
Blueberries are also an excellent addition to savory recipes like this salty and bright
Blueberry and Feta Quinoa Salad.
Organic Quinoa Grain is cooked, cooled and tossed with a honey-vinegar dressing, fresh blueberries, cucumber, green onions, mint and feta.
Corn

Corn is one of the most popular grains in the world, but there's something special about fresh-grown corn on the cob! The fresher you can get it, the sweeter it is, plus it's rich in B vitamins, fiber, zinc, magnesium and more. One simple but scrumptious recipe for corn is these
Gluten Free Corn Fritters. Fresh corn, fresh herbs and cheese are combined with
Gluten Free 1-to-1 Baking Flour and eggs, then pan fried to crisp deliciousness. Garnish with sour cream for extra flavor!
Corn on the grill is always welcome at a barbecue, but we love it in a grain salad like this
BBQ Quinoa Salad. Here, cooked corn (you can use a few ears of that grilled corn!) is stirred up with
Organic Tricolor Quinoa, fresh veggies, cilantro and barbecue sauce. It's the perfect side for a burger!
Kiwi

Sweet, juicy kiwi are more popular than ever, and an excellent source of vitamin C. While they're delicious sliced on a fruit platter, we love it in this
Creamy Fruit Salad, an update on that 1950s favorite. This dessert-like salad features kiwi, strawberries, pineapple and clementines tossed with
Shredded Coconut and pistachios, and combined with a sweet and creamy dressing made with Greek yogurt, heavy cream and vanilla.
Speaking of summer desserts, this
Seasonal Fruit Galette is one of our favorites. Not only can you vary the fruit according to what's freshest, but it's all wrapped up in a gluten free crust made with
Gluten Free 1-to-1 Baking Flour, butter, milk and egg.
Peaches

The first peaches of the season are already showing up at Farmer's Markets and grocery stores, and we couldn't be happier! these sweet juicy orbs are a good source of vitamin C and so delicious in all kinds of recipes. One we've been enjoying lately is this
Gluten Free Peach Dutch Baby. A batter made with
Gluten Free 1-to-1 Baking Flour, eggs, lemon and vanilla is poured over sauteed peaches, baked, and topped with sliced almonds, powdered sugar and whipped cream.
For something a little differentand entirely delicioustry these
Black Pepper-Thyme Biscuits with Sausage and Ginger Peach Relish. Buttermilk biscuits made with
Bob's Red Mill Organic Unbleached All-Purpose White Flour,
Coarse Grind Cornmeal and fresh thyme are split and topped with juicy pork sausage and a luscious ginger peach relish.
Watermelon

Watermelon is a summer classic, and we can't get enough of this sweet treatcold slabs out on the patio, whirled up in a smoothie, frozen into pops, or stirred into this
Watermelon Quinoa Salad with Fermented Honey. Here,
Organic Tricolor Quinoais combined with watermelon, feta, red onion and basil and tossed with a fermented honey vinaigrette.
Watermelon has many lovely uses all summer longwhy not plan ahead and test out this
Patriotic Watermelon & Feta Flag? This fruit and cheese plate is comprised of artfully arranged rows of cubed watermelon and feta, with a dish of fresh blueberries to complete the "flag."
Zucchini

Chances are, one of your neighbors has a zucchini plant this year, which means that if you play your cards right, you could be the lucky recipient of some surplus squash! Zucchini's mild flavor and firm texture makes it an ideal addition to all kinds of dishes, plus it's a good source of vitamin B-6 and an excellent source of vitamin C. Enjoy it in this cool, refreshing
Zucchini Basil Smoothie. Here, fresh zucchini is pureed with spinach, basil, peanut butter, lemon and
Pea Protein Powder for a summery breakfast or snack.
Yes I know I've included several grain salads here, but we have so many lovely recipes to share! This

Fathers Day

Father's Day is a wonderful opportunity to show your Dad how much you care. If you're lucky enough to be able to spend the day together, we have some excellent recipes we think he'll love! First up: our incredible paleo

To continue our barbecue adventure, may we present this luxurious
