Bob's Red Mill Whole Wheat Pastry Flour is 100% stone—ground, whole grain flour made from U.S.-grown soft white wheat. The whole wheat berries are milled with the nutritious bran, germ and endosperm all intact. Many people ask how whole wheat pastry flour is different from whole wheat flour. The answer is simple: whole wheat pastry flour is milled from soft white wheat, whereas regular whole wheat flour is milled from hard red wheat. It has a lower protein content than regular whole wheat flour and it makes wonderfully tender whole grain baked goods. I love whole wheat pastry flour for most of my baking. Not as high in protein as hard whole-wheat, but incredibly light, and a great texture. I can usually "sneak" it into my baking without my husband noticing too much of a texture change from traditional white flour. Also not available at my local store.

After trying Bob's whole wheat pastry flour, I can no longer buy/be satisfied with regular white whole wheat flour. My muffins, waffles, bread, and anything I use it in is like I am using all-purpose flour but with all the fibers needed! My children are always raving about my blueberry muffins or the cinnamon rolls and I have to tell them "and it's made with whole wheat!" But they can't stop eating and wanting more. I've used it before, and it has a similar consistency as white flour. I use it in all my recipes because it doesn't have that heavy wheat flavor or consistency. I've used a lot of different flours and this one is the best.

I use this to make many things, especially individual pizzas. I make a large batch of pizza dough and then pat out the small size pizzas. I then partially cook them and freeze the crusts. We will pull a crust out of the freezer and enjoy them anytime of the week by adding fresh ingredients and baking it fresh to order. The crust is crunchy and filling. I enjoy these for my family instead of store bought crusts with preservatives.

BEST ANSWER: It depends on the recipe. I have not tried to make angel food cake but chocolate cake is fine. I have not tried to make sugar cookies but oatmeal, ginger snap and even chocolate chip are good. Sometimes you need a little extra liquid for whole wheat.

BEST ANSWER: I make rye bread with it in my bread machine. First add the wet ingredients then the dry, then the yeast. Use whole grain setting for 1.5 lb loaf.
3/4 cup warm water
3/4 cup pickle juice
2 3/4 cups whole wheat pastry flour
1 cup rye flour (Bob’s is the best)
1/3 cup sugar
1 tsp dough enhancer
1 Tbsp caraway seeds
1 Tbsp active dry yeast

BEST ANSWER: Hi! Because of its relatively low protein content (8-11%) I wouldn't recommend the Whole Wheat Pastry Flour for a yeast bread. Instead I would recommend our Whole Wheat Flour or Artisan Bread Flour.
