Bob's Red Mill Whole Wheat Pastry Flour is 100% stone—ground, whole grain flour made from U.S.-grown soft white wheat. The whole wheat berries are milled with the nutritious bran, germ and endosperm all intact. Many people ask how whole wheat pastry flour is different from whole wheat flour. The answer is simple: whole wheat pastry flour is milled from soft white wheat, whereas regular whole wheat flour is milled from hard red wheat. It has a lower protein content than regular whole wheat flour and it makes wonderfully tender whole grain baked goods. Our Whole Wheat Pastry Flour is a good source of dietary fiber and provides 3 grams of protein per serving.

Love this flour
I sub this flour in for half of the all purpose flour in most of my baked goods now. Healthier and gives a better depth of flavor without the heaviness of whole wheat flour. I love it. I only wish it was more readily available in most supermarkets. I can only get it in one near me and so I mail order it in bulk. Great product!

I just love using this whole wheat pastry flour on my desserts/pastries, specially in my cookies and cakes. It really makes a difference compared when I used just the regular all-purpose flour. They're moist and healthier. Packaging is very nice, and it has recipes in the back that I would definitely try in the future and the quality is just great. Would definitely buy more!

I use this to make many things, especially individual pizzas. I make a large batch of pizza dough and then pat out the small size pizzas. I then partially cook them and freeze the crusts. We will pull a crust out of the freezer and enjoy them anytime of the week by adding fresh ingredients and baking it fresh to order. The crust is crunchy and filling. I enjoy these for my family instead of store bought crusts with preservatives.

BEST ANSWER: Hi! Because of its relatively low protein content (8-11%) I wouldn't recommend the Whole Wheat Pastry Flour for a yeast bread. Instead I would recommend our Whole Wheat Flour or Artisan Bread Flour.
