Happy October! Fall is finally in full swing, and we're loving the cooler weather and everything it brings: pumpkin patches, long walks, and lots of soup. In this month's Fresh & Seasonal Recipes, we explore delicious comfort foods, warm baked goods and spooky Halloween treats. Read on and get inspired!

Beets

Superhero Muffins Brightly colored with an earthy flavor, beets are available in all their glory--look for the classic deep red varieties or the milder flavored golden beets! An excellent source of folate and a good source of manganese, they offer moisture to these nutrient-packed Superhero Muffins from Elyse Kopecky. Here, blueberries and grated beets are folded into a dense batter made with Almond Flour and Gluten Free Rolled Oats and flavored with cinnamon and molasses. Organic farro replaces arborio rice in this delightful Farro Risotto by Katie Workman. Gorgeous golden beets are roasted, sliced and stirred into a rich risotto flavored with onion, vegetable stock and fresh herbs, and topped with crispy shallots.

Cabbage

Handmade Shrimp Tacos An economical and nutritious choice, cabbage can also be used in a wide variety of dishes! Stir fry it with beef and aromatics, stew it in a soup or shred it for fresh coleslaw to add a mega dose of vitamins C and K to your diet. Cabbage adds crunch and color in these Shrimp Tacos with Homemade Corn Tortillas. Here, tortillas made with Masa Harina are filled with marinated and sauteed shrimp and topped with a creamy slaw made with green and red cabbage, green onions, cilantro, mango and jalapeo. Cauliflower
