Place 1 cup water, oil and salt in a medium saucepan and bring to a simmer. Remove from heat and add flour, mixing vigorously. Cover and let rest for 10 minutes.
Place on a piece of parchment or waxed paper. If too dry, add warm water 1 tablespoon at a time until dough clings together. Knead with oiled hands briefly to form a ball, then into a cylinder. Divide into eight equal-sized balls.
Heat a nonstick skillet over medium-high heat. On parchment or waxed paper, roll each piece of dough into a 6-inch round. Cook until browned, about 3 minutes per side. Serve hot or at room temperature. Store each roti between pieces of parchment or waxed paper.
