Basic Cooking Instructions for Cracked Freekeh

Our Organic Cracked Freekeh is a flavorful, high-fiber and whole grain food. It’s made using a traditional roasting method which gives it a chewy texture. Freekeh adds a subtle smoky flavor to salads, pilafs and all other dishes.    The ancient freekeh grain is a traditional food that originates from the Middle East and Northeastern Africa. This grain cooks up quickly, has a high fiber content and is a great source of manganese   For stovetop cooking, combine 2 ½ cups water with 1 cup Organic Cracked Freekeh and ½ teaspoon salt. Bring water and salt to a boil and add in the freekeh. Cover and reduce the heat to medium-low then simmer for 20 minutes or until liquid is absorbed.   Enjoy a simple freekeh recipe by tossing the hot cooked grains with lemon juice, olive oil and fresh herbs. You can also make a hearty hot cereal by topping your freekeh with milk, honey, nuts and fruit.    This Freekeh Pilaf with Apricots and Almonds is a slightly more unique freekeh recipe and is sure to please a crowd. It takes just 10 minutes to prep and incorporates ingredients like chopped onion, sliced almonds, diced dried apricots and freekeh, of course! Spices like cloves, cumin and coriander round out the flavors and a hint of lemon juice offers a burst of brightness. Ingredients

For Stove Top Cooking
  • 2 ½ cups Water
  • ½ tsp Salt
  • 1 cup Organic Cracked Freekeh
In an Instant Pot
  • 1 ⅔ cup Water
  • ½ tsp Salt
  • 1 cup Organic Cracked Freekeh

Instructions

Stovetop
  1. Bring water and salt to a boil. Add freekeh, cover and reduce heat to medium-low. Simmer until liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, for 5 minutes.
Multi-Cooker
  1. Please water, salt and freekeh in the pot of a multi-cooker. Set the valve to sealing. Select “Multigrain” Setting. Press “Pressure” until High Pressure is illuminated. Press “Adjust” until Normal is illuminated.
  2. Using the “-“ and “+” keys, set cook time for 10 minutes.
  3. Once the cooking time has finished, leave steam release handle in place and allow the pressure to release naturally. Drain excess water and serve.
