Planning the Perfect Fathers Day Lunch

Planning the Perfect Fathers Day Lunch

Fathers Day is a day to honor and celebrate the special man (or men) in your life. Planning the perfect Fathers Day lunch is a great way to do that and get all the family together. Its out with the flowers and girly Mothers Day colors and in with the manly, Dad Day decor. Many men love to spend time outdoors, so a backyard BBQ or lakeside picnic can be a great lunch idea and provide plenty of opportunities to mingle, get rowdy with outdoor games and crack open a few beers. If your dad prefers to enjoy lunch indoors, you can always host the lunch somewhere rustic and guy-friendly and decorate using some kind of outdoor or woods theme. Then you can enjoy the best of both worlds . . . an outdoor vibe with indoor air conditioning! Here are a few delicious recipe ideas to put on the menu so you can help feed the clan on this special day.

Planning the Perfect Fathers Day Lunch | Bob's Red Mill Is it a carrot cake? Is it a blondie? Well never tell! Either way, this sweet treat is tasty and will go fast. Luckily this recipe makes a whopping 32 bars. You can always double up on the recipe if you think youll need more. We use our organic unbleached white all-purpose flour and baking powder, plus plenty of brown sugar, butter and vanilla to help make the blondies. The frosting is homemade from cream cheese and powdered sugar, with the warm flavors of vanilla, cinnamon, nutmeg and just a pinch of salt. The recipe for these blondies is simple yet mighty and we know your dad will thoroughly enjoy them for dessert. If not, the kids definitely will!

Socca

Planning the Perfect Fathers Day Lunch | Bob's Red Mill Socca is a flatbread thats wheat and grain free. The French call it socca, while the Italians call it farinata. Whatever the moniker, its a Mediterranean favorite and kitchen staple in Western Europe. Its loaded with flavor, quick and easy to make and so versatile you can make all kinds of goodies with it. Cheesy pizza? Check. Flatbread loaf? Check. Muffins topped with veggies? Check. You can use olive oil to make this socca softer or skip it if you prefer a crispier texture. We use garbanzo bean flour to get the party started, along with salt, pepper, warm water and optional garlic powder and herbs. Top with anything you think your dad will like.

Buffalo Baked Cauliflower Falafel

Planning the Perfect Fathers Day Lunch | Bob's Red Mill Who knew healthy could taste so good? If your dad isnt much of a meat eater, try these buffalo baked cauliflower falafel balls. We make them by combining a cauliflower and onion mixture with a chickpea and gluten free rolled oats mixture. Blend them together along with organic chia seeds, turmeric, salt, buffalo wing sauce and baking powder. Create balls and line them up on parchment paper before popping them in the oven. Once cooked through, you can baste them with extra buffalo sauce and let them bake a little longer to really ramp up the flavor. Its perfect Sunday funday food for Dad and the rest of the boys too.

Cran-Apple Buckwheat Salad

Planning the Perfect Fathers Day Lunch | Bob's Red Mill For something a little lighter, this cran-apple buckwheat salad is the perfect meal for dads to eat everywhere. We use buckwheat groats and peeled and chopped Granny Smith and Fuji apples, along with lots of flavor from Dijon mustard, pepper, parsley, chives and apple cider vinegar that adds just a bit of bite in the dressing. Baby spinach gives this salad a healthy punch and pumpkin seeds and dried cranberries create plenty of texture. Theres really no going wrong with this one unless your dad just hates apples. If thats the case, dont fret and keep reading.

Sweet and Spicy Salmon Rub

Planning the Perfect Fathers Day Lunch | Bob's Red Mill Dads that prefer a little meat with their veggies will love this sweet and spicy rub used on a nice, thick salmon fillet. We make the rub using brown sugar or coconut sugar, mixed with salt, whole fennel seeds (or you can use ground), along with ground ginger, cayenne pepper and whole mustard seeds. (Ground is acceptable too.) Use it to rub down the salmon filet completely, then wrap the fish in plastic and let it chill in the fridge for at least an hour. Then you can bake it in the oven or toss it on the grill, assured that no matter how you cook it, its guaranteed to taste amazing. Heres to the perfect Fathers Day lunch, sans the stress. Make all the dads in your life feel special by throwing them a bash to remember.
