Sweet & Spicy Salmon Rub

Brown sugar combined with fragrant spices makes the perfect blend for seasoning salmon.  Substitute coconut sugar to make this sweet and spicy salmon rub paleo-friendly. This rub is also great for pork tenderloin.

Ingredients

Spice Rub
  • 1 tsp Brown Sugar or Coconut Sugar
  • 1 tsp Kosher Salt
  • 3/4 tsp whole Mustard Seeds or 1/2 tsp ground Mustard
  • 3/4 tsp whole Fennel Seeds or 1/2 tsp ground Fennel
  • 1/4 tsp Ground Ginger
  • 1/8 tsp Cayenne Pepper
Salmon
  • 1 lb Salmon Fillets or other protein

Instructions

  1. If using whole mustard and/or fennel seeds, lightly toast the seeds in a small skillet over medium heat until fragrant, 2-3 minutes. Let cool completely, then coarsely grind in a clean spice/coffee grinder or with a mortar and pestle.
  2. In a small bowl, combine sugar, salt and spices. Rub entire spice mixture over the flesh side of each salmon piece. Wrap in plastic and chill for 1 hour. Cook according to your favorite recipe.
