Preheat oven to 325°F. Oil two 8x4-inch loaf pans.
In a large bowl, mix sugar, oil, eggs and vanilla together. In a separate bowl, combine the remaining dry ingredients. Stir the dry ingredients into the wet and then fold in the zucchini and nuts (if using).
Pour batter into prepared loaf pans. Bake 60 - 70 minutes or until a tester comes out clean.
