Grain Free Lemon Chia Seed Muffins

This muffin is a grain free and gluten free treat flavored with fresh lemons and chia seeds. The flavor combination was inspired by lemon poppy seed muffins. Chia seeds add a fun healthy twist on that classic muffin flavor. Recipe courtesy of Mary Helen Leonard from Mary Makes Good.

Ingredients

Instructions

  1. Preheat oven to 350°F. Lightly grease muffin pans.
  2. Whisk together flour, baking soda and salt.
  3. In a separate bowl, whisk together eggs, coconut oil, maple syrup, honey, lemon juice and zest.
  4. Add liquid ingredients to dry, and stir together until just mixed. Add chia seeds and mix again.
  5. Divide batter evenly in muffin tin cups. Gently shape tops by patting down batter (if a uniform shape is desired).
  6. Bake 20-25 minutes, or until edges of muffins become golden brown. Let baked muffins sit for at least 15 minutes before removing from muffin tin.
