Ingredients

  • 2 Tbsp Unsalted Butter
  • 3/4 cup White Rice Flour or Organic White Rice Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Sea Salt
  • 3/4 cup Sugar
  • 3/4 cup Milk
  • 2 cups Strawberries sliced
  • 2 cups Peaches sliced
  • 1 Tbsp Sugar (reserve for topping)

Instructions

  1. Melt butter in a 350°F oven in a 9-inch pie pan.

    Mix together rice flour, baking powder and salt, then add sugar & milk. Pour batter straight into melted butter, do not mix. Scatter fruit into batter mixture, do not mix into it. Scatter reserved tablespoon of sugar on top. Bake until edges are a golden brown, about 35-45 minutes.  Makes 10 servings.

    *Any combination of fruits can be used for the cobbler; peaches, nectarines, blueberries, strawberries, raspberries, blackberries and more.
