Ingredients

  • 3/4 cup Flaxseed Meal
  • 1-1/2 cups Whole Wheat Flour or Organic Whole Wheat Flour
  • 3/4 cup Oat Bran Cereal or Organic Oat Bran Cereal
  • 1/2 cup SPLENDA® Sugar Blend
  • 1/2 cup Brown Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1 Zucchini large-sized, grated
  • 1 Eggs (or 1/4 cup egg whites)
  • 3/4 cup Milk
  • 1 tsp Vanilla Extract

Instructions

  1. Mix all the dry ingredients in a large bowl. Combine completely.
  2. Stir in the zucchini, milk, egg and vanilla until just combined.
  3. Scoop into muffin pan.
  4. Bake for 18-20 mins at 350 degrees.



    Makes 12 muffins.
