Ingredients

  • 1-1/2 cups Fava Beans
  • 4 Garlic cloves
  • 2 Scallions coarsely chopped
  • 2 Tbsp Cilantro coarsely chopped
  • 2 Tbsp Mint coarsely chopped
  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 cup Lemon Juice
  • 1-1/2 tsp Ground Cumin
  • 1-1/2 tsp Paprika
  • 1 Salt and Pepper to taste

Instructions

  1. Place the Fava Beans in a bowl, cover with water to a depth of 2 inches and allow them to soak overnight.
  2. Drain the beans and place them in a saucepan. Cover with cold water to a depth of 2 inches and simmer, partially covered, until the beans are very tender - about 1 1/2 hours. Drain.
  3. In a food processor, finely mince the garlic, scallions, cilantro, and mint. Remove 1 tablespoon of this mixture and set aside. Add the beans, 1/4 cup of the olive oil, lemon juice, cumin, and paprika to the food processor and process until smooth. Season to taste with salt and pepper.
  4. Place the puree in a shallow dish and drizzle with the remaining olive oil. Sprinkle the reserved herb and garlic mixture on top and serve with pita bread for dipping.
