Easter Cupcakes

Ingredients

For the Cupcakes
For the Chocolate Frosting
  • 1 cup Unsalted Butter softened
  • 3 cups Confectioner’s Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/8 tsp Salt
  • 1 Tbsp Milk
  • 2 tsp Vanilla Extract
For the Topping
  • Strawberries whole
  • White Chocolate Discs or orange chocolate melts
  • Orange Food Coloring oil-based
  • Dark Chocolate
  • Toothpick
  • Crushed Oreos

Instructions

For the Cupcakes
  1. Line cupcake pan with liners or grease pan with butter and lightly dust with flour.
  2. Melt butter and add eggs one at a time, then stir in vanilla.
  3. In another bowl, sift together flour, baking powder, baking soda, cocoa powder, sugar and salt and add flour mixture with milk to the butter mixture.
  4. Fill cupcake cups 1/2 full.
  5. Preheat oven at 350 degrees F and bake for 15-17 minutes or until the toothpick inserted into cupcakes comes out clean.
  6. Remove from oven and let cool for a few minutes before transferring to a wire rack. Allow cupcakes to cool completely before frosting.
For the Frosting
  1. Combine butter, sugar, cocoa powder and salt and beat with electric mixer until blended. Add the milk and vanilla and beat for 5 minutes or until it reaches a smooth and creamy consistency.
For the Strawberries
  1. Melt white chocolate over double boiler or in the microwave in 30 second increments and stir until it is melted with no lumps. Add a few drops of food coloring until you achieve the desired orange color.
  2. Dip strawberries in melted orange chocolate and allow it to rest on wax paper until chocolate hardens.
  3. Melt dark chocolate over a double boiler or the microwave for 30 second increments and stir with a spoon until there are no lumps. Using a toothpick, add the eyes and mouth onto the strawberries.
  4. Frost the edges of the cupcakes and leave a hole in the middle (for the chocolate strawberry) and add crushed Oreos on top.
  5. Serve at room temperature. Enjoy!
