Ingredients

  1. In a large mixer bowl, combine boiling water and rolled oats. Let stand for 30 minutes. After 20 minutes, dissolve 1 tsp. sugar in lukewarm water (110 degrees). Sprinkle yeast in water and stir. Let stand for 10 minutes.

    Add honey, salt and butter to rolled oats mixture; combine together. Stir in yeast mixture. Add whole wheat flour and stir. Continue to stir and gradually add 4 cups all purpose flour. Knead for 10 minutes. Place in large oiled bowl. Cover and let rise until doubled (1 ½ hours).

    Punch down and knead for 2 minutes. Let rest for 10 minutes. Divide dough and shape into 2 loaves. Put into greased 9x5 inch pans. Let rise until 1 inch above rims of pans (1 hour). Bake at 400 degrees for 30 to 35 minutes. Loaves are done when there is a hollow sound when tapped. Remove from pans and place on cooling rack. Brush with butter while hot.  Makes 2 loaves (12 slices each).
