Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Chocolate Chips
  • 3 oz Unsweetened Chocolate
  • 3 Eggs
  • 1-1/2 Tbsp Instant Espresso
  • 1 Tbsp Vanilla Extract
  • 1 cup Sugar
  • 3/4 cup Organic Coconut Flour
  • 1/2 Tbsp Baking Powder
  • 1/2 tsp Sea Salt
  • 1 cup Shredded Coconut

Instructions

  1. Preheat oven to 350°F.
  2. Melt the butter, a 1/2-cup of the chocolate chips and the unsweetened chocolate. Let cool.
  3. In a large bowl, mix eggs, coffee, vanilla and sugar until combined.
  4. Stir in chocolate.
  5. Add in flour, baking powder and salt and stir until all the flour is incorporated.
  6. Fold in the other 1/2-cup of chocolate chips and the shredded coconut.
  7. Spread into a 9x13-inch pan. Bake at 350°F for 38 - 40 minutes or until a toothpick comes out clean.
