Dairy Free Muesli Loaf

Ingredients

  • 3.5 cups Old Country Style Muesli
  • 1/2 cup Organic Pumpkin Seeds other seeds or nuts can be used if prefered
  • 2 cups Water
  • 1 Tbsp Psyllium Fiber Powder
  • 1 Tbsp Organic Chia Seeds
  • 1/4 cup Coconut Oil melted, or olive oil
  • 1/4 cup Maple Syrup
  • 1 tsp Sea Salt

Instructions

  1. Mix the Psyllium Husk powder and the Chia Seeds into the water. Set aside until thick, about 3 minutes.
  2. In a large bowl, add the Muesli and pumpkin seeds. Pour in the water mixture, coconut oil and maple syrup. Stir to fully incorporate.
  3. Line a lightly sprayed loaf pan with parchment paper and fill the pan. Bake at 350°F for 60 minutes. Allow to rest for 10-15 minutes before cutting.
