Ingredients

  • Four 14.5 oz cans Diced Tomatoes
  • 2 medium Onions diced
  • 1 lb Carrots diced
  • One 4.5 oz can diced Green Chilis
  • 14 oz Portobello Mushrooms diced
  • 1/2 cup Organic Quinoa Grain
  • 32 oz Vegetable Broth
  • 3 Cloves Garlic minced
  • 3 Tbsp Chili Powder
  • 1 Tbsp Ground Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  1. Combine all the ingredients in a large pot. Bring to a boil, cover and reduce heat to medium low. Simmer for an hour to cook thoroughly.
