Absolutely authentic
This is a good (not great) cornmeal for traditional southern style cornbread. If you grew up on cake style cornbread with wheat flour and sugar in it, this aint for you, but if you want to eat what your ancestors called cornbread use this cornmeal, and this recipe: http://www.seriouseats.com/recipes/2015/11/southern-unsweetened-cornbread-recipe.html

Found an easy cornbread recipe online that specifically called for medium grind cornmeal. Bob's Red Mill fit the bill perfectly. Great Texture & taste. Definitely a keeper.

Too Hard
This cornmeal is filled with little hard morsels that actually hurt your teeth when you eat it. Not sure what to use it for. Not good for cornbread that's for sure. Would not buy again.

Awesome Cornbread
Follow the recipe for great cornbread.
Hint on the wheat pastry flour. If you don’t have pastry flour, use regular wheat flour. For each cup used, take out 2 Tbls out of cup and add 2 Tbls of cornstarch. Mix and continue following recipe.

Love this Cornbread, I substitute the 1 c wheat flour with 1/2 c Wheat Germ, 1 oz. Coconut flour and 2 oz Spelt flour, same amount of milk and etc. ingredients, finished baking in 17 min. Serve hot with Pure Maple Syrup. I eat mine plain to savor the cornmeal flavor. I am anxious to try the fine Cornmeal + all the recipes mentioned in the 8 reviews. Hope I can find the cornmeal porridge recipe.

I made cornbread and it felt like there was sand inside.
I made cornbread and it came out full of hard bits like it was full of sand. I'm really disappointed.

Inedible crunchy cornbread. So gross.
I used this for cornbread and catfish fry. The cornbread was crunchy and inedible. I threw it away. The fish was verify as well. I are it because I was hungry, but it was gross. I'll use Jiffy before using this again. Why would anyone want medium ground crunchy cornbread? Disgusting and very disappointing.

I make my cornbread with this cornmeal & no flour. I cook the cornbread in the waffle iron & then freeze it. It is thin enough to thaw quickly, when a piece is needed for a meal.

Why is there a difference between this cornmeal and a gluten free cornmeal? Isn’t all cornmeal gluten free?

BEST ANSWER: The only difference is that the gluten free product is processed and packaged in our dedicated gluten free facility. It's also tested for gluten to make sure it is less than 20 parts per million to make it safe for gluten free certification.

Gluten isn't my problem, I am highly allergic to milk products and I am wondering if your cornmeal is processed in shared equipment with milk products?

BEST ANSWER: This product is produced in a facility that also manufactures milk. Our gluten free cornmeal however is not so you could use that one.
Is it normal to see some grey flecks in the cornmeal?

BEST ANSWER: Yes that is normal. This product is fairly uniform in color, with some black/grey specs, which can be attributed to the germ of the corn.

BEST ANSWER: The medium grind corn meal may be too fine for polenta. I would try the Polenta Corn Grits.
