Luckily, at Bobs Red Mill, were always searching for new ways to incorporate wholesome ingredients into your diets (and low carb sides just happen to be one of our favorites). Below, youll find seven side dishes that are light, nutritious and low carb. Some might need to be altered to fit your own specific diet, though you can use these as a base and get creative from there! Lets dive in.

Paleo Pizza Crust

This Paleo Pizza Crust calls for just six ingredients: Paleo Baking Flour, salt, baking soda, eggs, water and oil, and can be thrown together in just 10 minutes. Once youre done baking the crust, top your pizza with all your favorite meats, vegetables and sauces. This particular pie is topped with dairy-free pesto, grilled yellow squash and cherry tomatoes for a unique and nutritious twist. If youd like a smoky, salty kick, you can also add pancetta (as the recipe note mentions). This recipe makes four servings, though if youre serving your paleo pizza as a side dish alongside something like roasted chicken and salad, you can make your slices smaller and feed a larger group! Feel free to get creative with the toppings, too, by adding vegetables like broccoli, Brussels sprouts or asparagus.

Millet is a good grain when youre following a low carb diet, as its low in net carbs compared to many other grains. Eating foods that are low in net carbs means that you will digest the carbohydrates more slowly (while feeling full longer). Our own Hulled Millet has a pleasantly mild and slightly sweet flavor, which makes it the perfect accompaniment to this salad. The pomegranate seeds and fresh basil add a bright layer of flavor, and the butternut squash makes this hearty salad perfect for a light dinner. Theyre made with a base of Whole Wheat Pearl Couscous, cara cara orange, avocado and crab meat thats wrapped in leaves of butter lettuce. Although its easy to reach for tortillas or wraps, lettuce is a wonderful option when youre going low carb. You can use it for sandwiches, burgers, saladsanything, really! To make this dish completely low carb, youll want to hold off on adding the couscous. If you do want some other sort of tasty filler in your lettuce wraps, grains like couscous, brown rice, Kamut, millet and bulgur are good options (as theyre the lowest in net carbs). The addition of minced shallot, chives, tarragon and parsley add a nice flavor and texture, as does the dressing of olive oil, champagne vinegar and Dijon mustard. They also incorporate sunflower seeds, poppy seeds, sesame seeds, salt, ground black pepper, egg and olive oil for a cracker thats easy to whip up (and even easier to eat). They take only 15 minutes of prep time, so if youre looking for a good dish to throw together before a gathering, this easy crispbread might be just the ticket. You can pair them with your favorite dips, meats or vegetables. When youre looking for a small splurge and a bit of decadence, this Avocado Cashew Dip is a winner and its amazing when paired with the super seed crisps.
