Hi friends! I'm here today with more bready goodness to share with you. We are a good 'ol Southern family and with that comes traditions in food. That means, that when we have one of our good 'ol fashioned sit down Sunday dinners, there must be dinner rolls involved. We are also a good 'ol gluten free family and with that comes the task of getting a bit creative for our traditions.

These dinner rolls are soft and doughy on the inside with a butter sweet crust on the outside. You can make them as sweet as you would like. I've made them with pineapple juice before too to make them more reminiscent of Hawaiian rolls.

They look harder to make than they are. This recipe comes together super quickly and with the use of a cookie or ice cream scoop, you don't even have to get your hands dirty. You can't beat that, now can you? I hope you (and your family) love these as much as my crowd does.

Gluten Free Dinner Rolls
makes 9 rolls
Topping
- 2 TBSP Melted Butter
- 2 TBSP Honey
Combine the warm water, yeast and 1 tsp sugar in a bowl and allow to proof for 10 minutes.
In the bowl or your stand mixer, combine the rice flour, potato starch, corn starch, sorghum flour, baking powder, xanthan gum and salt. Mix until blended. Next add the yeast mixture, melted butter, sugar, apple cider vinegar and eggs to the dry ingredients. With your dough hook, blend the mixture until well blended and then knead the dough with your dough hook for 5 minutes. Place the dough into a well-oiled bowl, cover with plastic wrap and allow to rise for 1 hour or until doubled in size.
Once the dough has doubled in size, scoop cup scoops of dough into a well-oiled 9x9 casserole pan (I use a cookie or ice cream scoop for this). Cover with an oiled piece of plastic wrap, place in a warm place to allow to rise again about 30 minutes or until doubled in size. Brush the risen dough with melted butter and honey mixture. Preheat your oven to 325 and bake for 25 minutes or until golden brown. These are softest served warm straight from the oven. They reheat beautifully in the microwave.
