A lower carb pancake recipe using our Super Fine Almond Flour.

Ingredients

  • 1 cup Almond Flour
  • 2 Tbsp Canola Oil
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1 pkg Truvia (or favorite sweetener)
  • 1 tsp Vanilla Extract
  • 3/4 cup Cream (or unsweetened soy milk)

Instructions

  1. Heat griddle to 350°F and lightly coat it with spray oil.

    In a mixing bowl, combine dry ingredients. In another bowl whisk together the eggs, cream, vanilla and oil. Add the dry ingredients to the wet and whisk for at least a minute so that everything is moist.

    Pour batter on to heated griddle. Cook until bubbles form, plus a little longer. Take care flipping by using a wide spatula. These cakes will be thin like crepes. Flip and continue cooking about one more minute, but keep your eye on them.

    Serve warm with your favorite topping. Especially good is lemon juice and sour cream like a blini. Makes about four 7-inch pancakes.
