This delightful French toast is golden brown with a rich, "eggy" interior—without the egg! Instead, Chickpea Flour and Nutritional Yeast combine to make a delicious breakfast the whole family will enjoy. Make it gluten free with your favorite gluten free bread!
In a large, shallow bowl, whisk together chickpea flour, nutritional yeast, cinnamon, nutmeg and salt. Add milk and almond extract and whisk to combine.
Heat an electric skillet to 350°F or heat a skillet over medium-low heat. Melt butter or oil.
Dip bread in batter, flipping to coat well, then cook until golden brown, 3-5 minutes. Flip and cook until golden brown. Repeat with remaining bread.
Serve with your favorite fresh berries, a dollop of yogurt and a drizzle of maple syrup.
