This recipe is for the microwave and made in a coffee cup. It is easy and fast. This recipe was not tested by Bob's Red Mill. High Fiber, Lactose Free, Low Carb, No Sugar, Soy Free.

Ingredients

  • 1/4 cup Flaxseed Meal
  • 1 tsp Baking Powder
  • 1 Tbsp Coconut Oil melted
  • 1 pkg Sweetener Ideal or Stevia, your preference*
  • 1 Egg
  • 1/4 tsp Vanilla Extract
  • 6 pieces Nuts (optional nuts, raisins, etc.)

Instructions

  1. Mix all ingredients with a fork, in a coffee mug. Put in microwave oven for 50-55 secounds. Turn upside down and Muffin comes right out.
