Transylvanian Vegetarian Patties

This vegetarian version of the traditional meatballs uses Steel Cut Oats. This recipe was not tested by Bob's Red Mill.

Ingredients

  • 1 cup Steel Cut Oats or Organic Steel Cut Oats*
  • ½ cup Walnut Halves ground
  • ¼ cup Flaxseed Meal soaked
  • 1–3 Tbsp Olive Oil
  • 2–3 Garlic cloves, chopped
  • 1 bunch Dill, chopped
  • Salt to taste
  • fresh Parsley, chopped to taste

Instructions

  1. Soak oats in water at least 8 hours or overnight.
  2. Drain oats and mix with remaining ingredients in a large bowl. Form into two-inch patties.
  3. Cook over low heat in a nonstick skillet until browned; turn and brown on the other side.
