Ingredients

Ingredient Group
  • 2 Tbsp Almond Protein Powder (18 g)
  • 1–2 Tbsp Sugar, Monk Fruit Sweetener or Granulated Sweetener of your choice
  • ½ tsp Baking Powder
  • 1 Egg or 3 Tbsp Egg Whites
  • ½ tsp Apple Cider Vinegar
  • ¼ tsp Vanilla or Almond Extract
  • ¼ cup diced fresh or frozen Peaches, thawed (51 g)

Instructions

  1. Whisk together protein powder, sweetener, baking powder, egg, apple cider vinegar and vanilla or almond extract in a bowl.
  2. Place half of the peaches in the bottom of a microwave-safe 10 oz mug or small bowl, then pour the batter over and top with remaining peaches.
  3. Microwave 2–2 ½ minutes. The cake should spring back when touched. You can also insert a toothpick in the center to see if it comes out clean. Serve with vanilla ice cream for a special treat!
