Kofta Balls

I found this recipe in a book from a used book sale-"The Higher Taste." These are great as a substitute for meatballs in spaghetti, with tomato jam as an appetizer or made into larger patties for burgers. Gluten Free, High Fiber, Soy Free, Vegan.

Ingredients

  • 2 cups Cauliflower grated
  • 2 cups Cabbage grated
  • 1-1/2 cups Garbanzo Bean Flour
  • 1/2 tsp Sea Salt
  • 1/2 cup Onion grated (or 1/2 tsp Hing*)
  • 1 tsp Garam Masala **
  • 1 tsp Ground Cumin
  • 1/2 tsp Ground Coriander
  • 1/2 tsp ground turmeric
  • 1 pinch Cayenne to taste
  • 1 Ghee *** or Oil for frying or baking

Instructions

  1. Use a food processor to grate the cauliflower and cabbage (and onion, if using) or dice very fine.
  2. Sift the garbanzo bean flour and spices. Add to the grated vegetables and mix thorougly.
  3. Form into balls or patties and set aside.
  4. These can be baked or fried using ghee or oil. To bake, grease or line a baking sheet with parchment paper and bake at 350 until browned, about 20 minutes. To fry, heat ghee or oil in a wide saute pan. Add balls or patties and fry until golden. Flip and fry on second side. Let drain on paper towels. Serve warm.
