Whisk together milk, yogurt, maple syrup and salt. Add muesli, shredded coconut and chia seeds. Spoon mixture into four 8-ounce mason jars, dividing it evenly. Cover and chill for at least 8 hours or overnight. (They will keep in the refrigerator for up to 2 days.)
Just before serving, top with coconut, pumpkin seeds and hemp seeds.
