Dukkah

Middle Eastern spice and nut mix. Serve with bread, fresh veggies and a carafe of good olive oil. Adapted from a recipe by Susan Loomis.

Ingredients

  • 1/2 cup Brown Sesame Seeds
  • 1/2 cup Organic Pumpkin Seeds
  • 3 Tbsp Whole Coriander Seeds (or 1-1/2 tsp ground)
  • 3 Tbsp Cumin (or 1-1/2 tsp ground)
  • 2 Tbsp Ground Black Pepper
  • 1 Tbsp Whole Fennel (or 1/2 tsp ground)
  • 1 tsp Paprika
  • 2 tsp Large Flake Sea Salt or Kosher Salt
  • 3/4 cup Hazelnut Flour

Instructions

  1. Over medium heat, toast the sesame seeds in a skillet until golden. Remove from heat and set aside. Repeat with the pumpkin seeds.
  2. If using whole spices, toast each spice separately over medium heat until fragrant, no more than 1 minute.
  3. In a food processor or clean coffee/spice grinder, process the whole seeds and spices until ground.
  4. Add the spices and the hazelnut meal and mix to combine.
