Ingredients

  • 2 cups Black Turtle Beans
  • 2 Tbsp Oil
  • 1 medium Onion, chopped (1–1 ½ cups)
  • 1 medium Bell Pepper, chopped (about 1 cup)
  • 3 Garlic cloves, minced (1 Tbsp)
  • 1 Tbsp Ground Cumin
  • 2 tsp Paprika
  • ¼ tsp Cayenne Pepper
  • 2 Bay Leaves
  • 2 tsp Salt
  • 4 cups Chicken Broth
  • 2 cups Water
  • 1 Tbsp Red Wine Vinegar

Instructions

  1. Rinse beans before using. Heat oil in a large soup pot over medium heat. Add onion and sauté until soft, 7–10 minutes.
  2. Add pepper and cook until soft, another 3–4 minutes.
  3. Add garlic and spices and sauté for 1 minute until fragrant then add the beans, broth and water.
  4. Bring to a boil then reduce heat to a simmer and cook, covered, until beans are tender, about 90 minutes. When beans are soft, add vinegar and serve.
