Cranberry Mandarin Orange Upside Down Cake

Ingredients

  • 3/4 cup Butter melted
  • 3/4 Brown Sugar
  • 3/4 cup Pecans chopped
  • 1/2 cup Fresh Cranberries
  • 2 mandarin oranges peeled, segmented and chopped
  • 1-1/2 cup Organic Unbleached White All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ginger
  • 1/4 tsp Salt
  • 1 cup Sugar
  • 2 Eggs
  • 1/2 cup Orange Juice plus 2 Tbsp
  • 4 Tbsp Butter melted
  • 1 tsp Vanilla

Instructions

  1. Preheat oven to 350º. Pour butter in a 10' deep dish round baker or cast iron skillet. Spread evenly all over bottom. Sprinkle brown sugar event over the top of the butter.
  2. Spread pecans over butter/sugar mixture. Top with cranberries and mandarin oranges.
  3. In a large mixing bowl, combine flour, baking powder, cinnamon, nutmeg, ginger and salt. Mix well.
  4. In a separate bowl whisk together the eggs, orange juice, butter and vanilla.
  5. Pour the wet ingredients into the dry and mix until it all comes together. Do not over mix.
  6. Pour mixture over fruit and nuts. Place in the oven and bake at 350º for 30-35 minutes or until a toothpick inserted in the center comes out clean. Serve warm with ice cream.
