Ingredients

  • 1 cup Sorghum Flour
  • 1/2 cup Tapioca Flour
  • 1 tsp Xanthan Gum
  • 1 Tbsp Baking Powder
  • 1/4 tsp Sea Salt
  • 2 Tbsp Granulated Sugar
  • 2 tsp Ground Cinnamon
  • 3 Tbsp Unsalted Butter
  • 2 tsp Vanilla Extract
  • 2 Eggs large
  • Water as needed

Instructions

  1. Preheat waffle iron and coat with cooking spray. Mix together dry ingredients in one bowl, and wet ingredients in another (except water). Add wet ingredients to dry, cutting in with a fork. Slowly add water to the mixture and stir until reaching desired consistency. Mix quickly and no more than necessary to combine ingredients. Stir in about 1/3 cup raisins if desired. Cook waffles immediately. Makes 4 waffles. 

    Variation: Substitute fruit juice for water.
