Chocolate Protein Microwave Mug Cake

Dense, rich, fudgy and incredibly delicious, this simple mug cake is the perfect recipe for when you want a delicious treat fast. The combination of almond protein powder and dark cocoa powder gives this cake a texture between a devil’s food cake and a brownie! It’s best served right away, and a scoop of ice cream a sprinkle of extra chocolate chips add to the decadence.

Ingredients

  • 1 Tbsp Almond Protein Powder
  • 2 Tbsp Dutch Process Cocoa Powder
  • 2 Tbsp Sugar, Monkfruit Sweetener or Granulated Sweetener of your choice
  • ¼ tsp Baking Powder
  • ½ tsp Vinegar
  • 1 Egg
  • 1 Tbsp Chocolate Chips
  • Pinch of salt

Instructions

  1. Whisk all the ingredients in a microwave-safe mug or small bowl. Microwave 1 ½-2 minutes. The cake should spring back when touched. You can also insert a toothpick in the center to see if it comes out clean.
