Caramelized Onion Dip

Ingredients

  • 2 Tbsp Unsalted Butter (28 g)
  • 2 large Yellow Onions, peeled and thinly sliced (415 g)
  • 1 tsp Kosher Salt
  • ½ cup Chicken Broth, divided (118 mL)
  • 1 clove Garlic, minced
  • ½ cup Sour Cream (120 g)
  • 4 oz Cream Cheese, cut into small cubes and then softened to room temp (132 g)
  • 1 Tbsp Worcestershire Sauce
  • ¼ cup snipped Chives, divided (12 g)
  • ¼ tsp White Pepper
  • Classic Oat Crackers

Instructions

  1. Melt butter in a large heavy-bottomed pan over medium heat. Add onions, kosher salt and ¼ cup chicken broth. Stir well and cook for 30 minutes, stirring frequently. Add broth as needed to deglaze the pan. Continue to cook until the onions are dark brown.
  2. Add garlic, stirring well to combine, and cook for an additional 1-2 minutes. Remove from heat and allow to cool completely.
  3. Whisk sour cream, cream cheese, Worcestershire sauce, 2 tablespoons chives and white pepper together in a large bowl.
  4. Add cooled caramelized onions and stir well to combine. Cover and refrigerate for at least 2 hours or overnight.
  5. Serve with Bob’s Red Mill Oat Crackers and garnish with extra chives!
