Bob's Red Mill Restaurant Fried Grits

Ingredients

  • 6 cups Water
  • 1 tsp Sea Salt
  • 2 cups Corn Grits-Polenta
  • 3 Tbsp Unsalted Butter (optional)
  • 2 cups Cheddar Cheese grated

Instructions

  1. In a large deep pan over high heat, bring water to a boil.



    Gradually stir in polenta.
  2. Reduce heat and simmer gently, stirring frequently to prevent sticking, until mixture is very thick (about 30 minutes). Use a long-handled spoon because the mixture pops and bubbles and can burn the cook.
  3. Stir in 3 Tablespoons of butter (if you wish) and add salt if needed. Stir in cheddar cheese until melted.



    Pour mixture into a greased loaf pan and chill over night.
  4. Slice to the desired thickness and fry in a hot pan, using a small amount of oil, for 4-5 minutes each side.



    Makes about 12 servings.
