Preheat oven to 350°F and line two baking sheets with parchment paper.
In a large bowl, whisk together peanut butter, banana, melted coconut oil, egg and carrot.
Add dry ingredients and mix until a firm, cohesive dough forms.
Place the dough between two sheets of parchment paper. Roll to ¼-inch thickness.
Chill in the refrigerator for 20–30 minutes or until firm.
Remove the top parchment layer and use a dog bone–shaped cookie cutter to cut out treats. Transfer treats to the prepared baking sheets.
Re-roll scraps as needed, chilling between rounds if they soften.
Bake for 25–30 minutes, or until the treats feel firm and are golden brown around the edges.
Cool completely and store in a container at room temperature for 1 week, or in the fridge for up to 2 weeks.
