Avocado Cashew Dip

Cashews make an amazing substitute to cream in sauces, dips, and spreads. Avocado ups the creaminess of this recipe while the jalapeno, cilantro, and lime give a it a zesty kick. Try this as a party dip with gluten free crackers, sandwich spread, or plopped right on your nachos or tacos.

Ingredients

  • 1 cup Raw Cashews
  • 1/4 cup Water
  • 2 Tbsp Lime Juice
  • 1 clove Garlic
  • 1/2 Jalapeno stemmed and seeded
  • 1/2 tsp Salt
  • 1/4 tsp Ground Cumin
  • 1/8 tsp Ground Cayenne
  • 1 large Avocado
  • 1/4 cup chopped Cilantro

Instructions

  1. In a food processor or blender, combine cashews and water. Process until smooth.
  2. Add remaining ingredients and puree until smooth and creamy. Adjust consistency with water, if desired.
