Ingredients

  • 2 cups cooked Short Grain White Rice
  • 6 Apples large-sized, peeled, cored and sliced
  • 1 cup Sugar
  • 1 Tbsp Lemon Juice
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Sea Salt
  • 3/4 cup White Rice Flour or Organic White Rice Flour
  • 1 1/2 cups Old Fashioned Rolled Oats Or Organic Regular Rolled Oats
  • 1 cup Brown Sugar packed
  • 6 Tbsp Unsalted Butter cold
  • 1/2 cup Almonds chopped

Instructions

  1. Preheat oven to 350°F. Lightly oil a 9 x 13-inch baking pan; set aside.
  2. Stir together the cooked rice, apples, sugar and lemon juice in a large mixing bowl. Pour mixture into prepared pan. Set aside.
  3. In a small bowl mix cinnamon, salt, rice flour, oats and brown sugar. Cut in butter until crumbly. Sprinkle cinnamon mixture over rice-apple mixture. Top with almonds and bake for 30 minutes, or until golden brown and bubbly.
