medium-sized, peeled, cored and finely chopped
Instructions
Preheat oven to 425°F. Lightly grease muffin tins or use paper liners; set aside.
Mix the dry ingredients in a large bowl. Mix the milk, apple juice concentrate, egg whites and oil in a bowl or blender. Add to the dry ingredients and mix. Fold in the chopped apple.
Fill muffin tins with batter divided equally. Bake for 17 minutes. After cooling, store in a large plastic zip lock bag to retain moisture and softness.
