10 Grain Banana-Nut Muffins

This is wonderfully moist muffin and given a healthy boost with the addition of the Bob's Red Mill 10 Grain Cereal. A riper banana can only add to the sweetness and density of flavor. This recipe was not tested by Bob's Red Mill.

Ingredients

  • 1 cup 10 Grain Hot Cereal
  • 1-1/2 cups Milk
  • 1/2 cup Brown Sugar
  • 1/3 cup Unsalted Butter or Margarine
  • 1 Egg (large)
  • 1 Banana ripe
  • 2 tsp Vanilla Extract
  • 2 tsp Ground Cinnamon
  • 1 cup Unbleached White All-Purpose Flour
  • 1/2 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 cup Chopped Walnuts

Instructions

  1. Mix the cereal into the milk and let stand for 10 minutes.
  2. Cream the butter, sugar, egg, banana, vanilla, and cinnamon.
  3. Add the dry ingredients and cereal/milk mixture, nuts, & stir only until mixed.
  4. Spoon mixture into greased muffin pan. (I made 3 extra in Pyrex cups.)

    Bake: 400°F for 15 minutes.



    Makes 12 – 15 muffins.
