By: Bob's Red Mill | September 17 2021

Sit back and think about the last time you had a cracker. Was it days ago? Weeks ago? For most of us, crackers are a go-to treat every time we're craving a snack between meals. However, for some individuals with dietary restrictions, many store-bought cracker varieties are off-limits. If you're a fan of crackers, but can't enjoy them without experiencing digestion problems, then it's time to make them yourself. By making a batch of crackers at home, you get to choose the ingredients that go into the recipe—the most crucial being the flour. Because flour is the base of a cracker recipe, it's often the ingredient that has the most significant impact on an individual's digestive system. For those with a sensitive stomach or gluten sensitivity, almond flour is frequently the flour of choice. To make almond flour crackers that are truly top-notch, continue reading as we provide step-by-step instructions.

Why Choose Crackers?

When searching for a healthy snack, there are a variety of options to choose from. Because crackers are portable and easy to enjoy on the go, they're often a favorite amongst both children and adults. Pack them for your kids as a snack to enjoy after sports, include them as a part of your lunch, or keep them around the house to curb midday cravings. No matter when and where you enjoy this delicious treat, they are sure to satisfy you.

Why Almond Flour?

When choosing which flour to use, there are many different reasons to select almond flour. Aside from the delicious flavor and texture, it adds to baked goods, it's also one of the most widely used gluten free flours. Unlike other gluten free baking substitutes, almond flour creates a similar texture to wheat flour, without the need for several added binding agents.

Additionally, because almond flour is low carb, it's ideal for those following specific diets like the Atkins diet or ketogenic diet. At Bob's Red Mill, our Almond Flour is made from the finest California-grown almonds, which have been blanched and ground, creating a fine meal that is perfect for gluten free and grain free baking. It's also a must-have for individuals switching to a paleo diet!

What Is Gluten Intolerance?

If you're wondering when you'd need to bake gluten free goods, then we're here to help. While gluten free baked goods are commonly made for individuals who have celiac disease or gluten sensitivity, they can be enjoyed by everyone. Gluten is most commonly found in grains like wheat and barley and can cause digestion issues for those who are sensitive to the protein. Consuming a diet that is free of gluten can help those with celiac disease manage the symptoms better. Additionally, it can also help benefit those who experience other medical conditions that are related to gluten.

This being said, gluten-based foods are an excellent source of dietary fiber, and removing them from your diet can change your overall nutrient and fiber intake. If you decide to transition to a gluten free diet, we recommend speaking with a health professional to discover how it can affect your overall nutritional needs.

Step 1: Prepare the Oven

Preheating the oven works best when it's done before you start making the cracker dough. Turning on the oven before mixing ingredients will help it heat up properly and be ready when you're done mixing the dough. To make this homemade cracker recipe, preheat the oven to 350°F.

Step 2: Prepare the Dry Ingredients

After the oven has begun preheating, it's time to prepare the other ingredients, starting with the caraway seeds. Begin by crushing the caraway seeds using a mortar and pestle. If you don't have one, try placing the seeds into a zippered plastic bag and crushing them with a rounded kitchen utensil. Next, place the caraway seeds into a large bowl with the dry ingredients except for the sesame seeds and stir them all to combine.

Step 3: Prepare the Wet Ingredients

Now that all dry ingredients have been properly mixed, it's time to combine them with the wet ingredients. Begin by mixing oil and three tablespoons of water and add the mixture to the flour all at once. Stir the flour until a ball is formed. If the ball becomes dry and crumbly, then you'll want to add some more water, starting with a teaspoon at a time. Once you've added enough that the ball of dough remains together, no more water will need to be added.

Step 4: Roll the Dough

Once you have the dough formed into a ball for your homemade cracker recipe, rolling it out is the next step. For the crunchy crispy homemade crackers, it's crucial to roll half of the dough at a time and roll it until it is very thin. We recommend rolling the dough onto wax paper to prevent it from sticking to other surfaces.

Step 5: Shape the Dough

After the dough has been rolled out, you'll want to cut the crackers into the desired shape. First, cut the dough into 1-½ inch squares or triangles and prick them with a fork. Next, sprinkle sesame seeds onto an ungreased cookie sheet and transfer the crackers to the sheet.

Step 6: Bake the Crackers

Next, transfer the dough to the baking sheet, place it in the oven and bake for 15 minutes. Then, remove the crackers from the oven, transfer them to a wire rack, place that rack back on the sheet, and then back into the oven to crisp for 5 to 7 minutes.

Step 7: Allow Crackers to Cool

Once the crispy crackers are thoroughly baked, allow them to cool completely before eating them or transferring them to an airtight container.

Repeat with the other half of the dough to make four dozen crackers.
