  1. To make these cookies, begin preheating the oven to 325 degrees. Next, grease three separate cookie sheets with coconut oil and set the sheets aside.
  2. Now, combine the rice milk with one tablespoon of flaxseed meal and set it aside to sit until it forms a gel-like substance.
  3. Add the shortening, raw sugar, brown sugar and lemon juice to a large bowl and mix thoroughly with an electric mixer for 1-2 minutes until the mixture has taken on a creamy texture.
  4. Next, add the premade flaxseed gel, lemon zest, baking soda, baking powder and salt to the mixture. Use the electric mixer for another 15-20 seconds until all ingredients are thoroughly mixed.
  5. Add the oat flour to the other ingredients and mix for 30 seconds at low speed. Then, stir in the oat flakes and mix for another 30 seconds.
  6. Fold the cranberries into the cookie dough carefully until they're are evenly distributed throughout the batter.
  7. Using a large tablespoon, scoop out the cookie dough and lightly pat it to flatten it into a round cookie shape.
  8. Leaving space between each cookie, place about eight cookies onto each cookie sheet.
  9. Bake one cookie sheet at a time and place it on the center rack of the oven, long ways.
  10. Allow the cookie dough to bake for 9 minutes. Then, rotate the pan and bake the cookies for another 8-10 minutes until they've formed a slightly golden color.
  11. Cool the cookies for 15 minutes before removing them from the cookie sheet and placing them onto a cookie rack.
  12. As the cookies cool, place another cookie sheet in the oven and bake, until all of the cookie dough has been cooked.
