How did you become an influencer/blogger?
I had always loved cooking, but when I decided to follow a mostly plant-based diet, I wanted to start a blog to document my culinary adventures. Up until that point, I didnt know what my passion was in life. But sharing recipes, photographing food and participating in an online community gave me a purpose and direction in my life that I had always searched for. Now, I blog and photograph full time!
What started your journey into health?
When I started eating a mostly plant-based diet, I noticed how much different I felt than before. Eating whole, unprocessed foods made me feel more energetic and made me less susceptible to colds and viruses. Ive only had one cold since I started eating plant-based four years ago (really!).
Do you follow a modified diet?
I eat a mostly plant-based diet, meaning I eat vegan 90% of the time and vegetarian for the rest of the time. I went vegetarian when I was 14 for ethical reasons. Ive always loved animals and even made the transition to veganism in 2015. But I found that being vegan wasnt the best choice for my personal health, so I decided to create a hybrid of the two diets that have most helped me. I eat a ton of greens (kale is my favorite!), whole grains and pasta, nuts and seeds, and lots of fruits and vegetables.
What is something most people don't know about you?
Im a classically trained pianist and singer! I started taking piano lessons when I was four and Ive always loved to playit brings me a sense of calm and peace like nothing else does.I also sang competitively in high school and was an All-State singer. I still play classical music occasionally, but I love arranging compositions on the piano in my own signature style.
What is your favorite BRM product?
I love the Bobs Red Mill grains, likequinoa, freekeh andmillet! Whole grains make up a large part of my diet, and Ive found the Bobs Red Mill line to be of the best quality.
What is your favorite BRM recipe?
I recently developed astuffed peppers recipe for Bobs Red Mill that has quickly become a hit in my house. The filling is super easy to make with Bobs Red Mill freekeh, and its roasted in green bell peppers that still maintain their shape and crunch after being baked.
One tip for finding time to cook and bake amidst a busy schedule?
I work with food for my job now, but before that, I was working full-time in corporate insurance while blogging on the side. I had crazy hours at the office and I was even working from home many nights, so I get it! But I truly believe that people make time for whats most important to them. If healthy eating is a priority for you, then it will find room in your schedule! My best tip is to plan out your weekly meals a week in advance and grocery shop in one run to get what you need. Prep as many ingredients as you can when you have a spare moment (chop onions, cut broccoli into florets, etc.) and have them ready for when it comes time to cook. Oats person or a smoothie person? I prefer smoothies over oats, but my classic breakfast is avocado toast on sourdough and a cup of iced coffee with vanilla almond milk!
Any exciting announcements or plans for your Instagram or blog this year?
My blog and Instagram are a lot of fun, but Ive always dreamed of writing a cookbook. After my fianc and I get married in 2020, Im thinking it might be my time! Who are some of your favorite influencers? My favorite blogger of all time is Laura Wright of The First Mess. She is my ultimate food blogging role model. I love her recipes (we have similar tastes in food) and her food photography is second to none.
What do you like to do when you aren't working on recipe creation?
My favorite thing to do in the world is spending time with my little family; me, my fianc Jon and my dog Ivy. They are everything to me. I also enjoy reading and Im a member of a womens book club here in Connecticut! But when its just the three of us here at home, we love gardening, taking Ivy for walks or hikes and spending time around the house working on projects. Theres always something to be done!
Favorite season or holiday?
Fall is my favorite season, I love everything about it. Pumpkins, apple cider donuts, hayrides, carnivals, fall foliage . . . its the best time of the year! But my favorite holiday is definitely Christmas. There really is a magic in this season like no other time of the year, when familys in town and all the Christmas songs are playing on the radio.
What is your top baking tip?
Im a terrible baker! Most of the recipes on my blog are savory. I guess what I would have to say is, measure carefully, make sure the ovens at the right temperature and when in doubt, add an extra pinch of cinnamon.
Three words to describe yourself?
Kind. Creative. Driven.
Quinoa or rice?
Thats a hard choice! I vote rice :)
Favorite food brands?
I love Forager non-dairy cashew yogurt, especially in the strawberry flavor. This is the best yogurt Ive ever tried, dairy or non-dairy! I also love the Trader Joes hot sauce line, they have so many options!
