Trying to get some kids to eat more vegetables is like prying open the mouth of Jaws barehanded. They absolutely refuse, no matter how you present them. Its a mystery for the ages and just what predisposes some kids to love vegetables and others . . . not so much. However, if you have a kid that veers more in the not so much direction, dont despair. Weve got a few sneaky tricks up our sleeves with these recipes. Not only will you be able to incorporate more veggies into your kids diet, but the best part is, they may never know!
Buffalo wing sauce is the master of disguise in this recipe. We combine it with a flavorful falafel made from gluten free rolled oats and organic chia seed, among other good-for-you ingredients.Cauliflower and onion are finely chopped in a food processor and mixed with a chunky blend of chickpeas and oats. Both are combined with baking soda, the chia seeds and wing sauce and seasonings like salt and turmeric until blended smooth. Once everything is blended you can scoop out falafel balls to be baked in the oven for about 30 minutes or so.Once you hit the 30-minute mark, brush them with extra wing sauce and bake them a little longer. You can serve these babies with just about anything, but soft gluten free wraps are amazing, along with your kiddo's favorite dipping sauces. You could also serve these with fresh veggies, which can also be dipped in the sauce!
Every kid is different, but if you know your minis really love potstickers, these Veggie Chinese Dumplings could be a smash hit. We make the wraps using our unbleached white all-purpose flour, salt and water. Super simple. Folding these little guys takes a bit of finesse, but once youve got it, youve got it. The filling is a delicious blend of chopped shiitake mushrooms, shredded carrots and Napa cabbage, plus minced scallions, ginger and cilantro. In other words, all the veggies!Except they are chopped and minced so fine, that when you combine them with toasted sesame seeds and seasonings like red pepper flakes and soy sauce, they are virtually unrecognizable as veggies. Trust us, your little one will never be able to tell the difference between these and the pork-filled.Once you make the filling and assemble your dumplings, its just a matter of frying and steaming them until they are cooked through. You can make a tasty homemade dipping sauce full of Chinese flavors like soy, rice vinegar and ginger, then serve them up as a snack or even a light meal. Kids dont care either way, as long as they taste great!
This recipe could actually make a great breakfast at sunrise, or a meal for lunch or brunch. Its made using our Protein and Fiber Nutritional Booster, along with avocado, which is also full of fiber, plus full-fat coconut milk. Both of these ingredients are loaded with healthy fats that help keep hungry kids satisfied for hours. We use banana and pineapple along with the avocado, and even sneak in a little extra veggie goodness with blue spirulina powder. You can use honey or maple syrup to sweeten it up and garnish with your choice of fruits and granolas. Or top it with nuts and seeds. Either way, its yummy and crunchy and sweet, which means your kids will go wild over it, with zero complaints.
Okay, to be fair, this one is more like a dessert treat. Its just so pretty and good. However, its pretty darn healthy, too. We use Vanilla Protein Powder Nutritional Booster to give it extra oomph and hide a bit of blue spirulina powder in it for extra veggie nutrition.Banana and pineapple hide the fact that there are any veggies at all in this pretty, festive drink. You can also make this using bananas and blueberries instead or layer the two flavors together and give it a little swirl before you serve it up. Whichever way you make it, we promise it will be well-received by even the pickiest of veggie haters.Remember, you dont have to wage war to get your kids to eat healthier foods and incorporate more veggies in their diet. You just have to be a tiny bit sneaky. What they dont know wont hurt them, right?
