The cookies are made with Paleo Baking Flour, brown sugar, softened butter, grated carrots and egg, and a delicious spice mixture of ground cinnamon, cloves and nutmeg. The golden raisins add an extra touch of nutrition and the loads of sweet carrots make for a moist and tender great. The cream cheese frosting is rich and wonderful and made with just mascarpone cheese, Powdered Sugar and vanilla extract. Unsweetened Coconut Flakes are optional, but we think they definitely add to the treats texture and flavor.

Just use different colored M&Ms and sprinkles like red and green for Christmas, black and orange for Halloween and white and blue for Hanukkah.

Its also eggless! Its made with a custard filling of water, vanilla custard powder, sugar, milk and butter to resemble an egg yolk, though you can also opt out of that and ice the middle layer instead with frosting. If you cant find vanilla custard powder, use cornstarch and vanilla extract instead. You can also forego the egg shaped baking pan and use a rectangular one, instead, just keep in mind youll have to cut the cake to size. In the last step, let the kids spray the specks with a pastry brush! The specks are a mix of cocoa powder and warm water, and add so much to the end result. When this cake is finished, place it front and center on the table for all the Easter guests to admire.
