Peanut Butter Pumpkin Cookies

This is a healthy snack, created for my father-in-law who watches calories, but not nutritional value! He’ll eat lots of treats and not much of the “real meal”. This recipe was not tested by Bob’s Red Mill. Low Cal, Soy Free.

  1. Cream peanut butter, butter and sugars together.
  2. Add eggs and vanilla to creamed mixture.
  3. Mix flours, soda and salt together and add to butter mixture.
  4. Gradually add small portions of pumpkin and oats into cookie mixture, stirring them in well.
  5. Add optional ingredients if desired.
  6. Bake in oven preheated to 375 degrees for 8-10 minutes.



    Makes 3 - 4 dozen.
