Place teff, water, sesame oil, thyme, garlic and salt in a saucepan and bring to a boil. Cover and simmer for 15 minutes. Stir once or twice toward the end of the cooking process.
Spread cooked teff in a shallow pan to cool. When cooled, add scallions and form 6 equally portioned patties.
Heat a nonstick skillet that has been lightly sprayed with nonstick vegetable spray and fry until nicely browned on both sides.
Top with Jarlsberg cheese; turn heat off and allow cheese to slightly melt.
Assemble burgers with lettuce and tomatoes and whole wheat buns.
