Preheat oven to 400°F. In the bowl of a food processor, add flour, salt, smoked paprika, garlic powder and baking powder. Pulse to combine.
Add grated cheese and cold butter. Pulse 10–15 times, or until butter is broken into pea-sized pieces.
With the food processor running, slowly add ice-cold water and process just until the mixture begins to clump together.
Transfer dough to a lightly floured surface and gently knead until it comes together into a smooth dough.
Roll dough into a 12 x 14-inch rectangle, using additional flour as needed to prevent sticking. Using a sharp knife or pizza wheel, cut dough into ¾-inch-wide strips, each about 12 inches long.
Twist each strip by holding both ends and twisting them in opposite directions several times. Place twisted strips about 1 inch apart on a parchment-lined baking sheet.
Lightly brush the tops with water and sprinkle with sesame seeds. Freeze cheese straws for about 10 minutes, or until firm.
Bake for 12–15 minutes, or until crisp and the edges are lightly browned.
Store cheese straws at room temperature in an airtight container for up to 5 days.
