Ingredients

  • 1/4 cup unsalted butter (melted)
  • 2 tsp Baking Powder
  • 1-1/2 cups Buttermilk (approximately)
  • 1-1/4 cups Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour
  • 1 tsp Salt
  • 2 Eggs beaten
  • 3/4 cup Scottish Oatmeal or Organic Scottish Oatmeal
  • 1/2 tsp Baking Soda

Instructions

  1. Mix flour, oatmeal, baking powder, salt and soda. Stir in 1-1/2 cups buttermilk, the eggs and butter until smooth. (Stir in a little more buttermilk if batter becomes too thick.) For waffles just add 1 more egg and 1 tablespoon of oil. Makes about 12 pancakes.
