Savory Wild & Brown Rice Pilaf

Ingredients

  • 2 Tbsp Olive Oil
  • 1 cup Chopped Onion
  • 1 cup Wild and Brown Rice Mix
  • 1/2 cup finely chopped Carrot
  • 1-1/2 cups Vegetable Broth
  • 1 cup Water
  • 1/4 cup Chopped Fresh Parsley
  • 1 Salt and Pepper to taste

Instructions

  1. Saute the onion in the oil until the onions start to brown. Stir in the rice mix and carrots and saute for a few minutes.
  2. Add in the broth and water; bring to a boil. Cover and lower heat to a simmer. Cook for about 55 minutes, or until rice is tender. Fluff with a fork and stir in the fresh parsley, salt, and pepper to taste.
