Pumpkin Spice Energy Bites

These pumpkin spice energy bites are all your favorite fall flavors rolled into a bite sized treat. This recipe is mildly sweet, so if you want them sweeter, feel free to add more sweetener. You can also make them into an extra special treat by dipping them in white chocolate to make them more like truffles.

Ingredients

  • ½ cup Quick Cooking Rolled Oats (45 g)
  • ½ cup Almond Flour (52 g)
  • 3 Tbsp Organic Coconut Sugar (or Brown Sugar)
  • ½ tsp Ground Cinnamon
  • ¼ tsp Ground Ginger
  • ¼ tsp grated Nutmeg
  • ¼ tsp Ground Cloves
  • ¼ cup Pumpkin Puree (60 g)
  • 2 tsp Vanilla Extract
  • Hulled Hemp Seed or Seeds of your choice, optional for rolling

Instructions

  1. In a large bowl, combine oats, almond flour, coconut sugar, cinnamon, ginger, nutmeg and cloves; stir well.
  2. Add pumpkin puree and vanilla extract, stirring well to combine.
  3. Form mixture into balls, about 1 tablespoon each. These can be made bigger if you wish. Roll in hemp seeds or leave plain. Enjoy immediately, or refrigerate for a firmer bite. Store in an airtight container in the refrigerator.
