These pumpkin spice energy bites are all your favorite fall flavors rolled into a bite sized treat. This recipe is mildly sweet, so if you want them sweeter, feel free to add more sweetener. You can also make them into an extra special treat by dipping them in white chocolate to make them more like truffles.
In a large bowl, combine oats, almond flour, coconut sugar, cinnamon, ginger, nutmeg and cloves; stir well.
Add pumpkin puree and vanilla extract, stirring well to combine.
Form mixture into balls, about 1 tablespoon each. These can be made bigger if you wish. Roll in hemp seeds or leave plain. Enjoy immediately, or refrigerate for a firmer bite. Store in an airtight container in the refrigerator.
